Position: Factory Manager

Position Overview

The Factory Manager is responsible for leading, supervising, and optimizing all production operations of Lakeshore Bakery. This role ensures that bakery items are produced efficiently, safely, and consistently while maintaining the highest quality standards expected in the hospitality industry. The Manager will oversee production planning, resource allocation, staff management, hygiene compliance, and coordination with other departments to support hotel and external orders.

Key Responsibilities:

Production Management

  • Oversee end-to-end bakery production, ensuring timely preparation of breads, pastries, cakes, and special items.
  • Develop and implement daily, weekly, and monthly production plans based on demand forecasts.
  • Maintain production schedules to support hotel outlets, events, banquets, and external clients.
  • Monitor product quality and consistency, ensuring recipe accuracy and standardization.

Operational Efficiency

  • Optimize resource utilization including raw materials, equipment, and manpower.
  • Identify improvement areas and implement cost-effective solutions to reduce waste and increase productivity.
  • Ensure smooth workflow, preventive maintenance of machines, and minimal downtime.

Quality & Food Safety Compliance

  • Ensure all products meet Lakeshore quality standards and hospitality industry expectations.
  • Enforce HACCP, food safety, and hygiene protocols across the bakery production floor.
  • Conduct regular inspections to ensure compliance with quality assurance guidelines.

Staff Management

  • Lead, train, and supervise production staff including bakers, helpers, and packaging personnel.
  • Prepare duty rosters, assign tasks, and monitor performance.
  • Conduct training sessions on baking techniques, safety, and quality standards.
  • Maintain a positive work environment and enforce disciplinary procedures when required.

Inventory & Procurement Control

  • Monitor stock levels of raw materials, ingredients, and packaging items.
  • Work closely with the Purchasing Department for timely procurement.
  • Maintain accurate consumption records and report variances.

Reporting & Coordination

  • Prepare operational reports on production volume, wastage, labor efficiency, and cost control.
  • Coordinate closely with Sales, Purchasing, Finance, F&B, and Banquet teams for smooth supply alignment.

Education:

  • Bachelor's degree in Hotel Management, or related field.

Experience:

  • Minimum 3–5 years of experience in bakery manufacturing or large-scale production in the hospitality or food industry.
  • Knowledge in export business.
  • At least 2 years in a supervisory or managerial role.

Skills & Competencies:

  • Strong leadership and team management skills.
  • Excellent knowledge of bakery production techniques and equipment.
  • Ability to manage high-volume production efficiently.
  • Familiarity with HACCP, ISO, or food safety standards.
  • Excellent communication, planning, and multitasking ability.
  • Strong analytical and problem-solving skills.

Work Environment

  • Fast-paced production environment with strict timelines.
  • Requires standing for long hours and handling industrial bakery equipment.
