Role Overview

The Head of Business is a senior leadership role responsible for driving the commercial success, brand positioning, and operational excellence of a top-class restaurant. This role bridges creative culinary vision with financial performance, ensuring the restaurant operates at the highest standards of luxury hospitality while achieving sustainable growth and profitability.

The Head of Business oversees strategy, financial performance, guest experience, partnerships, and senior operational leadership, working closely with the Executive Chef and General Manager.

Key Responsibilities

Strategic & Commercial Leadership


• Define and execute the restaurant's business strategy in alignment with brand vision and culinary direction


• Identify growth opportunities including new revenue streams, events, private dining, and strategic partnerships


• Lead pricing strategy, menu profitability analysis, and revenue optimisation


• Oversee brand positioning, market presence, and competitive differentiation

Financial Management


• Full P&L ownership with responsibility for revenue, margins, and cost controls


• Develop and manage annual budgets, forecasts, and financial reporting


• Monitor KPIs including average spend, covers, labour costs, and profitability


• Ensure compliance with financial, legal, and regulatory standards

Operations & Performance Oversight


• Work closely with the General Manager to ensure seamless front- and back-of-house operations


• Maintain exceptional standards of service, consistency, and guest experience


• Implement systems and processes to improve efficiency without compromising quality


• Oversee supplier relationships and high-value contracts

Leadership & Culture


• Lead, mentor, and develop senior management and department heads


• Foster a culture of excellence, accountability, and continuous improvement


• Act as a visible leader and brand ambassador within the restaurant and industry


• Support talent retention, succession planning, and leadership development

Brand, Marketing & Partnerships


• Collaborate on marketing, PR, and media strategy to enhance brand prestige


• Build relationships with VIP clients, partners, and industry stakeholders


• Oversee special projects, collaborations, and high-profile events

Essential


• Senior leadership experience in luxury hospitality or fine dining


• Proven track record managing high-revenue, premium food & beverage operations


• Strong commercial acumen with deep understanding of P&L management


• Exceptional leadership, communication, and stakeholder management skills


• Experience working alongside executive culinary leadership

Desirable


• Experience in Michelin-starred or award-winning restaurant environments


• Background in hospitality group expansion or multi-site operations


• Strong network within luxury hospitality, wine, or premium lifestyle sectors
